Sweet, Spicy, Red and Saucy

Evan Stroud

Lots of people get mad because hot sauce doesn't apologize for what it is: hot. It stands by its core value of spiciness. At the end of the day it's accepting that a little bit of pain is a worthwhile tradeoff for a better flavor experience. I've heard people say about hot sauce, 'I don't like that because it's spicy' and that's when you know you're dealing with someone who would rather have boring, mediocre food than go through a little ouch for a culinary improvement. They get offended by the heat and think making their flavor great again isn't worth it. But good flavor is freedom and I for one am a patriot. Do I wish there was a perfect hot sauce that could balance its spiciness PR to unite those on both sides of the hot sauce aisle in the fight against bad flavor? Of course. But should hot sauce be banned from the menu because a couple weak people don't like it? No way. And anyone who might be offended that I think hot sauce can improve a meal is welcome to choose a different sauce of their own, even if it's past-date and makes their food taste worse.
